My husband and I are small pasture farmers in northwest Oregon. Our farm is called Heritage Farms Northwest ( www.heritagefarmsnw.com ) We raise heritage Red Wattle hogs on pasture. We can sell the unrendered hog fat to individual customers. All our meat is processed USDA and is legal for resale. However, we can only sell the fat, you have to render it yourself. Rendering fat is easy as can be. All you need is a crockpot, some cheese cloth, and some jars to store it..

Oh.. we also finish a bunch of hogs on a chemical free hazelnut orchard each year. So we can offer you hazelnut finished fat for a very special lard!!!

We have both back fat and leaf lard (unrendered) for sale.

So glad I found this site!  I live in Salem and recently started using lard as a substitute for butter in cooking since I am VERY allergic to dairy and I don't understand why I never used it sooner!  I was looking for an organic source, though you are in my area, and from your website, it sounds like you're pretty close to organic?  Anyway...  I guess I'll have to contact you guys.  :D

We have a good amount of unrendered fat in our freezer. Both leaf lard as well as back fat. Both are great for cooking and easy to render. I drive through Salem on a regular basis, so I could likely bring it to you, or at least very close to you. We are not organic, but we are pretty close to it. Our hogs eat locally grown grain that we grind ourselves and live on pastures that are chemical free. We do buy a vitamin/mineral mix that we feed and occassionally we do deworm them, but other then that, no chemicals, no antibiotics and no added hormones. Just good, clean, country living!!

Does anyone know the quality of a place called Dietrich Meats out of Pennsylvania? They have a website and will mail it to you, they sell lard but I wonder if it's reputable. Thank you for responding!

In Tacoma, WA, Metropolitan Market has leaf lard (unrendered) in the freezer section.

The other locations of MM should have it as well, from my understanding of the information on their website.
I have ordered lard from Millers out of PA through a buying club, from Peaceful Pastures out of Tennessee. Rendered and unrendered.
