Our current batch of pastured hogs will be headed to the butcher on April 16th so we'll have pastured pork leaf lard in stock the following week. On the leaf lard product description page you will see a link that says "in stock notification." If you click there it will ask you for an email address where you can be automatically notified when we get it back in stock.
Please don't forget, however, that we have a great assortment of pastured pork, grass fed beef, grass fed lamb, and pastured chicken available even now.

Mitchell on July 13, 2012 at 4:48pm Just wanted to let people in San Diego County know that Son-Rise Ranch (www.son-riseranchstore.com) has unrendered leaf and back fat from pastured pigs available for purchase through their website, delivered to the following farmers markets: in Hillcrest, Little Italy, Leucadia/Encinitas or Vista.

Permalink Reply by Kathryn on July 30, 2012 at 6:10pm After searching at many stores in the Fresno, CA area, I finally found some lard: at Vallarta. This is a chain of Mexican supermarkets prevalent in the Central Valley. They do their own butchering of whole pigs (my husband was also able to find some cuts of meat for making sausage that we couldn't get elsewhere) and have lard in with their refrigerated meats.
It's packaged like the other meats on a styrofoam tray with plastic wrap. There are no labels on it and it's a solid block of lard (ie, not re-packaged "manteca" hydrogenated lard). Next time I go, I will try to get more information, but I am working on the assumption that they are processing it on site.

Last time I posted here we were only selling raw fat because we did not have a licensed rendering facility that would allow us to sell rendered lard for cooking. Finally !! we have someone that will render it for us in their USDA facility.. WAHOOOOOO..
This means that we now have USDA rendered lard for sale. We have regular back fat Lard, as well as pure rendered Leaf Lard. Both are packaged in 16 oz deli tubs and weigh about .9 lbs each. We can ship them nationwide.
Our hogs are heritage Red Wattle Hogs that are raised on pasture from day 1 till the Final Day. No antibiotics, no hormones, no growth stimulants, no Paylean (YUCK! who wants to turn fat into meat anyway!!) Just good, clean pasture and locally grown grains and hay in the winter.
