I live in Salem and recently started using lard as a substitute for butter in cooking since I am VERY allergic to dairy and I don't understand why I never used it sooner! I was looking for an organic source, though you are in my area, and from your website, it sounds like you're pretty close to organic? Anyway... I guess I'll have to contact you guys. :D

We have a good amount of unrendered fat in our freezer. Both leaf lard as well as back fat. Both are great for cooking and easy to render. I drive through Salem on a regular basis, so I could likely bring it to you, or at least very close to you. We are not organic, but we are pretty close to it. Our hogs eat locally grown grain that we grind ourselves and live on pastures that are chemical free. We do buy a vitamin/mineral mix that we feed and occassionally we do deworm them, but other then that, no chemicals, no antibiotics and no added hormones. Just good, clean, country living!!
